Moist Banana Bread Recipe (Cooking is Sexy)

moist banana bread recipe, cooking is sexyWhen a female friend of mine saw her ex-boyfriend in Trader Joe’s buying a can of pumpkin to make a pie, she “knew” he had a girlfriend. Cuz men don’t cook on a weekend, right?

Um, wrong.

I cook all the time. If my kids are here, I cook, and I delight in knowing I’m preparing something healthy and tasty for them. If I’m alone, I cook, and I revel in being able to eat whatever I want.

No, I don’t heat microwave dinners or open jars of Ragu. I cook from scratch. Whether it’s tomato sauce, cauliflower pasta, grilled asparagus, shish kabob, grilled salmon, marinated carrots, green chard, or the perfect steak.

So when I had some over-ripe bananas laying around, I didn’t chuck them in the trash or compost heap. I made some moist banana bread. From scratch.

Okay, I admit, my daughter helped. And this easy banana bread recipe came from my brother’s wife. But at least I didn’t buy a plastic-wrapped loaf of moist banana bread from Trader Joe’s. It was a fun bonding experience to cook with my kid. Here’s our moist banana bread recipe, with daughterly improvisations of a decadent kind.

Moist Banana Bread Recipe

Preheat oven to 350 degrees

Ingredients:
3 very ripe banana
3/4 c sugar (brown or white)
pinch of salt
1 egg
¼ cup melted butter
1 tsp Baking soda
1 T Water
2 cups flour
Chocolate chips to my daughter’s taste

Steps:
1. Mash bananas in a metal bowl. Blend in sugar, salt and slightly beaten egg.
2. Melt butter and stir into banana mixture
3. Dissolve soda in water then add to mixture
4. Add flour
4.1 Add as many chocolate chips as it takes to make a girl happy
5. Pour into greased and floured bread pan and bake at 350 for 45 min. – check with a tooth pick! If it comes out clean, the bread is done.
6. Once cooled, dump out of pan and slice into 1” thick pieces. Store in ziplock bag to increase the moistness of the banana bread.

Eat as much of this moist banana bread as you want, whenever you want. It’s good fuel for running or cycling or whatever your sport.

Plus, the chocolate’s pretty good in this easy banana bread recipe. Even decadent.

  3. Well, when bananas go bad in my house, they go right into the blender. I’m a smoothie queen!!!

    Sounds yummy though. And yes, cooking is definitely sexy. At least when men do it. :)

    I second your post, I like a good cook.

    When were in the planning stages of our new house, it took me ten attempts to get the kitchen right, it’s the most important room in the house. I went to one place, that wasn’t cheap, and the ‘consultant’ ignored my drawings and spec and asked who was going to be living in the house. He then designed a kitchen with a single oven, a massive microwave and a small hob. I thanked him for wasting both our time. And now I’m the proud owner of a steam over, a double oven/grill, large induction hob, and, ok, a massive microwave.

    I often end up with dodgey nanas, so I’ll let you know how I get on with this.

  9. Teri – I thought you’d be more into firm bananas than mushy ones.

    Exception – I cook solo all the time, but I only occasionally bake and it’s usually with my daughter – which is very fun, because she takes charge and tells me what to do. She took charge of this moist banana bread recipe adventure.

  10. My single father taught me to cook. Mom to bake.

    It was my father that had me (against my better judgement) stick my arm up the turkey to clean it out for Thanksgiving dinner when I was twelve. I have made Thanksgiving dinner for him every year since.

    He taught me how to make stocks and soups and really, really big bowls of mashed potatoes.

    Big hugs for being a Dad that can pass that on, I had no idea what it meant back then, but sure the heck appreciate it now.

  12. What is wrong with microwaving bowls full of Ragu? *smile*
    Seriously though, I can only cook about a handful of dishes. We don’t eat out all the time, but I can tell you my freezer is packed with microwavable items. I’m not proud of this fact, I’m just sayin’.

    Now that BF and I are “reconnecting” we are trying to cook some new dishes together. Last night we made twice baked potatoes and parmesan-dijon chicken!

    I just might try your banana bread recipe though. I hate bananas unless they are baked into bread. Mmmmm

  13. Sorry, DM. My banana bread is better than your banana bread. Mostly my recipe is the same, but there is one magic ingredient that makes this one superior. Here’s my recipe:

    1/2 cup butter, melted
    1 cup white sugar
    2 eggs
    1 teaspoon vanilla extract
    1 1/2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup sour cream (this is the magic ingredient)
    2 or 3 medium bananas, mashed (I use an old-fashioned hand masher)

    1. Preheat oven to 350 degrees and grease a 9×5 loaf pan
    2. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda, and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream and bananas; spread evenly into the loaf pan.
    3. Bake at 350 for 60 minutes or until an inserted toothpick comes out clean. Cool for 10 minutes before removing to a wire rack.

    Excellent with cream cheese. Last time I made this (and no offense to your daughter, but chocolate chips in banana bread are a SIN) I used Tofutti’s “Better than Sour Cream” and it made no difference in texture or taste. Sub in applesauce for the eggs and the whole shebang becomes vegan.
